This is an wonderful soup on a cold night! There is lots of room to make it your own. Leave out the chicken and use vegetable broth or water for a vegetarian version. Add your favorite vegetables, some red pepper flakes for a bit of heat or experiment with your favorite spices. You can even make it a fish chowder, just add the fish in at the end with the kale.
